Nem Nuong
Here is the Nem Nuong recipe:
5 lbs of ground pork (for better result get the ground pork from Costco)
5 lbs of ground pork (for better result get the ground pork from Costco)
2/3 cup of sugar
5 tablespoons of fish sauce for the 3 crabs brand (other brand you might have to reduce to 4 tablespoons)
If
eat nem nuong without noodle/roll then 4 tablespoons of fish sauce for
the 3 crabs brand (other brand you might have to reduce to 3
tablespoons)
3 tablespoons of honey
3 tablespoons of tapioca starch
2 tablespoons of cooking wine
1 tablespoons of ground black pepper
1 teaspoon of MSG
1 bag Baking Powder (Alsa brand pink bag)
1 small bag inside Nam Powder bag only (only use the small bag inside the Nam Powder bag and throw away the whole bag, don’t use the white powder in the big bag)
1 whole garlic (minced)
4 green onions finely chopped
See the attached picture for Baking Powder brand and Nam Powder brand.
Make sure you do EXACT 5 lbs mixture at a time, the ground pork could be a little less than 5lbs but never more than 5lbs.
example if you want to make 10 lbs Nem Nuong, you should make two batches instead of one batch and double the ingredients it will taste different.
Mix all ingredients together really well for 10 minutes. Mix with two hands like how you knead dough.
